Easy Cheesy Quinoa

This recipe is one of my favorites to make during summertime barbecues. It really is almost like a mac and cheese. Plus, it’s super quick and easy.

I was a little late to the quinoa party because I was following a grain free pales diet as it became popular. I decide to try it after buying it cheap at Aldi as a way to mix up carb sources, and I really like the texture! It also has a decent amount of protein for a grain, which is helpful if you’re struggling to get your protein in.

Easy Cheesy Quinoa

  • 1 cup uncooked quinoa
  • 1 bouillon cube
  • 1 T lite butter
  • 2 cloves garlic, minced
  • 1/2 cup fresh Parmesan
  • 1 tsp Herbs de Provence

First, cook your quinoa. I use 1 cup quinoa, 2 cups water. Toss the bouillon cube (or plain salt) in and bring to a boil. Reduce heat to low and simmer for about 15 minutes until quinoa is soft and fluffy.

While the quinoa is cooking, very slowly sauté your garlic. I cooked mine on medium low for about 10 minutes until it was soft and aromatic.


Once the garlic and quinoa is cooked, remove everything from the heat. In a mixing bowl, combine the quinoa, garlic butter,  cheese, and herbs. (I was actually short on fresh Parmesan so I used powdered as well and it was still delicious and cheesy!)


Super simple, super delicious!


Makes 4 servings, about 1/2 cup each. Macros are: 165 cals 5.8F/20C/7.9P
