Easy Banana Pancakes

Happy weekend guys! This recipe always reminds me of the Jack Johnson song. Maybe that’s why I enjoy making it on weekdays so much 🙂

Anyway, this is a great way to start off with some protein, and yummy carbs. A friend shared this recipe with me during contest prep and I was being super conservative with carbs but since prep is over I eat them probably 2-3 times a week.

Ingredients:

  • 1 egg
  • 3 oz banana (pretty close to one small banana)
  • 1 scoop protein powder of choice
  • 1/4 tsp baking powder
  • Splash of vanilla

Macros: 274 cals, 24 C/ 6 F/ 32 P

*based on my protein powder

Measure banana and mash with your egg. I’m a stickler for not wasting food so I always have overripe bananas in my freezer.

Add protein powder, vanilla, and baking powder. I used Cellucor Red Velvet Cake Batter this time but the combinations are endless. I’ve also used their Peanut Butter Marshmallow flavor and it is YUM.


Heat your skillet (I test mine with water drops still, is that weird? Old fashioned? Eh, it works!) Also spray your pan or grease with coconut oil.

Pour battery into skillet like a regular pancake. When bubbles form in the middle of the batter and begin to burst, it’s time to flip!


Side note: bananas have a pretty high sugar content so these can burn easily! Feel free to turn the heat down a smidge as you go along.

Once they’re cooked through on both sides, serve with desired toppings and enjoy! I did spray butter and 0 cal syrup, but these would be delicious with fruit or peanut butter!

These were a great way to start my Saturday with some protein. We are heading to the lake with my parents so that will probably be my hardest macro to hit today, but I’m determined!
